Other than a few tomatoes we ate straight off the vine, while gardening, I harvested the first veggies from our garden this summer: four chioga beets. We skinned them, cut them up into tiny squares, tossed with olive oil and salt, and roasted for about 40 minutes, then served with Burrata cheese.  Still have the greens – haven’t decided what to do with them yet. Can’t wait for more!
